Ingredients:
-Pork tenderloin: 400 g
-Shallot: 1 pc.
-Apple: 1 pc.
-Apple juice: 3/4 cup
-Dried thyme: 1/4 tsp
-Fatty tops: 1/2 cup
-Refined oil: 2 tbsp.
Preparation:
Cooking time: 55 minutes
Add 1 tablespoon of oil to a preheated frying pan, then put the meat, quickly brown it over high heat, sprinkle with salt or spices and send to the oven in a heating sleeve (180°C) for 20 minutes.
Separately, stew the chopped onion and apples for five minutes until they become soft, add thyme and apple juice. Cook over medium heat until the sauce has reduced in volume by about half (7 - 10 minutes).
Pour the cream into the sauce, mix well and heat for another 2 - 3 minutes over low heat, without bringing to a boil.
Remove the pork from the oven, let it "rest" for 5 minutes in the sleeve, then cut the meat into portioned pieces.
